ENCHEES!
I made enchiladas tonight...two small batches to accommodate our particular preferences...
These are sliced roast beef with guisada sauce and sour cream with Monterrey jack cheese...
And for Annabelle...
Jack and cheddar cheese with red sauce.
Tasty.
I did lay in lighting today...lots of ladder time but I wore different boots so it wasn't so bad on the feet.Students are already moving in to the upper floor dorm rooms...it's a bit disconcerting to see these kids wandering around an active construction site , but who am I to say , right?
